Christmas Borscht
These days, Christmas is the one time that a family gets to eat together for 2 or 3 days at a time. Old fashioned Christmas cooking is smashing, but before too long you just can't stomach another meal that involves Turkey.
That is when it is a smart move to cook a recipe slightly different, and this Christmas Borscht Recipe is definitely that!
Ingredients
- 32 oz beets, diced canned
- 3 cup water
- 1 stalk of celery v
- 1 carrot, quartered
- 1 bay leaf
- 1 garlic clove, peeled
- 1/4 teaspoon peppercorns
- 1/4 tsp salt
- 1 tbsp lemon juice
- 1 tsp sugar
- A little sour cream or dill sprigs for use as a garnish
Directions:
Drain the beets, reserve the liquid and set beets aside.
In a good sized saucepan mix beet liquid, water, celery, carrot, bay leaf, garlic, peppercorns and salt.
Bring to a rolling boil. Cover and reduce heat then simmer for 15 minutes. Remove vegetables and seasonings with a slotted spoon. Stir in reserved diced beets, lemon juice and sugar. Carry on cooking for 10 minutes or until heated through. Serve topped with sour cream (or dill sprigs as a garnish)
